These are some of the pics of my rebuild but now I really want to make some other changes to it but I just don't know where or what to use. I want to take down the sides and put up new ones because these are really cheap and they look like they are taking on water. Any recommendations would be greatly appreciated.

Weight going forward is going to be the critical factor in anything you attempt to do with your pontoon. In observing the photo of it floating as is it's already at critical mass. I can't actually suggest what may be the best materials to utilize for your needs myself. But there is a forum I used to frequent that some members did successfully rebuild some party huts. I'd suggest you glean the rebuild section there for some insightful ideas. I'll paste a couple links below but I didn't take the time to find the biggest and best one there, but then again they may have taken it down.

Bamby is right, Looking at the water marks(small image before rebuild.jpg) on the logs, "critical mass " is what came to my mind as well.

The "Sunblocker" will give you an Idea about what he was talking about.
