In Florida it will be a sand bottom,maybe some silty mud if you are in brackish water. The normal DIY way to set pilings is with a pump. You jet them down. That is how I did mine and it was just my wife and I with a 2" rented pump. You use a piece of pipe with the end beat flat for the jet. Run it down around the piling and it will go down. You really need to let them sit, braced well for about 6 months to get the sand consolidated around them and then they are solid. Mine are about 4-5 feet in the sand.
The OP doesn't have the problem. He says the pilings are already there.

I'm in Tallahassee and I dry-dock my boat at a marina in St. Marks. They use a fork lift for a bunch of pontoon boats. To deal with my boat, I had to have a rack made as the three pontoons are too close for the forks. My rack was made by the same company that made the boat trailer. It all works very well and I feel good about having the boat out of the water and sun.
