This is an option in a Sun tracker build site but there was no description of what it is. Anyone know?

that may be "underskinning" you mean?
it involves covering the underdeck with aluminum for better water flow while underway, improves performance and a provides a quieter ride...go for it.
here, pull my finger

If so, it would be a typo on their website - its a check box on their options when you build-a-boat. I tried doing a search on the net and the only thing I got was the skirting that goes around mobile homes.

Update: It apears by looking at pictures of different sun trackers that underpinning is probably a "cover-up" skirting that is attached directly above the pontoons to hide the brackets where it joins the decking structure. The signature series pictures show the brackets clearly, where the regency series pictures show them covered up by a type of "flashing" that is attached to the brackets forming a smooth look from deck to toon.
