Jack Plate on toon

I fish the flats in and around Tampa Bay. A lot of guys run a jack plate on their boat to provide vertical rise to the motor when running in various depths of shallow water. I have yet to see a jack plate on a pontoon boat. My engine is a 25hp Merc. I'd like to have the option to lift the motor for shallow water running and also be able to pole the boat hunting for redfish. I prefer a jack plate to a tilt/trim setup. Has anyone done, or seen this done on a toon?

I seen it done on bigger motors , so your shoud be a piece of cake.

Myself I have a prop guard on mine that allows me to trim almost all the way up and still move forward, it acts like a jet boat , I use mine over weed beds, I can trim up and leave the intake in so you still have cooling water coming through the engine.
